From Friends to Forever
Last month, Shyd and I celebrated our first year of marriage. One of our anniversary activities was to take a little trip to Disneyland, one of many places where our friendship took one step closer into something more. So we thought it would be fun to recreate some of the pictures we took a little more than 5 years ago <3
“OBESE”
so Shyd, Dustin, and I went to 24hr Fitness this morning and heard an announcement that the fitness instructors were providing body fat measurement testing. So we went to get tested. Sad yet funny results (see picture). Also, in comparison to Shyd and Dustin, I am the fattest between the 3 of us.
Upon receiving the results, Shyd responded with: “well, you do love your ice cream!”

I’ve always had “unhealthy” results when it came to body measurement tests (underweight for my height, “fat” for my size, etc.), so these results don’t really upset me, nor do they put me in an unhealthy mindset of “omg I’m OBESE! Must lose 50lbs!” I am on the cusp of “obesity” according to this chart, after all. I love my body. I do understand, however, that a tiny change must be made in my lifestyle in order to hop over borderline “obese” into at least “acceptable,” and the instructor gave me simple instructions for me to reach that healthier percentage: “keep eating your ice cream, just put on a bit more muscle.”
With that, starting tomorrow, I’ll be joining Shyd [and Dustin] in their special little, what I call “manly workout.”
[[although, I am a little curious if these results may be a little skewed during that special time ladies have when they may be prone to taking on water =T]]

This passed weekend, a bunch of friends and I took a trip up to Auburn, CA to experience white water rafting for the very first time. Overall, I have to say that it was an AMAZING experience!
Everything started with nervous excitement..nervous because it was something completely new to all of us, and excited because…well, it was something completely new to all of us! The first few hours were spent on a few class 1 and 2 rapids, and a couple manageable class 3s. And it was great getting used to the paddling and commands of our river guide. Enjoying the natural scenery, learning more about rafting and rivers, an overall “chill” experience. That quickly changed when we reached our first challenging class 3 rapid.
“The Troublemaker.” Our guide let us know that this was the first rapid where our pictures would be taken, then prompted us to make sure our legs were locked in the proper rafting position, and we faced it head on. It all started fine. We made it through some pretty big waves, dips, and turns, and everything from there happened so quickly. We headed into another dip, but this time, we hit it at just the right angle that forced us all out of the raft. Being on the lowside of the dip, I was among the first to fall off, along with Loy and two others in our raft. It felt like everyone had fallen on top of me underwater, because i felt everyone’s feet kicking at me and pushing me deeper into the water.
After i stopped feeling everyone’s feet, i felt like it was a looong time till i finally reached the surface. When i did, i tried to float on my back in swimmer’s position, trying to catch my breath, only to find that i was hyperventilating. I got a glimpse of our boat and tried swimming toward it, but felt like i wasn’t moving, i was then sucked under again. Having not had enough air from my hyperventilating fit, i knew i had to get to the surface quicker, but again i felt like it was soo far away. I reached the surface and one of my boat mates grabbed a hold of me as we were tossed around in the current. ”I got you! I got you!” he cried, just before we were dragged under once again. I no longer felt his grip on me, and I continued to be tossed and dragged under the river’s current.
I popped up above the surface again, trying to look straight up at the sky, trying to breath, still forcefully hyperventilating, thus unintentionally taking in more water, only to see a big rock right in front of me. Sucked under again. By this point i only remember seeing spots, and flashes of white. I was waiting for my body to run into the rock, or to just finally run out of air. Even underwater, I was hyperventilating. I was running out of energy, trying to stop my own body from hyperventilating underwater, trying to claw my way to the surface, trying not to drown.
Again, after what seemed like forever, my life vest brought me to the surface. I popped up next to a shoe. I grabbed it, hoping a body wasn’t attached to it, and I held on to it. For some reason, my first thought was, “someone’s gonna need this back,” my second thought was, “yay! a floating object!” I realized the current had died down a bit, but the waves were still pummeling me, so I got into swimmer’s position, and took the chance to catch my breath, even as the waves came over my head.
When I felt like my hyperventilating had died down enough, i looked around, and saw my boat about 20ft away. I turned over and tried swimming toward them, up river against the current [got rid of the shoe]. My sudden burst of activity caused me to start hyperventilating again, and the realization that I might hit another rapid before getting back on the boat caused me to scream for them, but only labored wimpers came out. I heard our river guide yell, “we’re coming for you!” so I turned onto my back and tried breathing, and was relieved when my boat finally reached me.
Safely on the raft, i was still breathing hard, and i realized i was very cold and shivering furiously. I looked down at my skin and it was very red, but I could be wrong since i was still seeing spots at this point. My team got our raft to shore as we waited for a few more of our raft mates who had been picked up by others or managed to swim to shore. I got the strength to sit up, but realized i was very dizzy and a bit nauseous. Our river guide said that’s normal when you’ve taken in a lot of water and hadn’t been breathing, and you may throw up. Seconds later, i was over the side of the raft dry heaving.
From the dump in the river, our raft was missing 2 oars, so Shyd and I didn’t row for the rest of the trip until we reached camp for lunch. During lunch, we all talked of our experiences in the river (the other half of our friends were in a raft that had flipped over on the same rapid). And after lunch we headed back onto the river.
I think the experience on Troublemaker successfully traumatized me for the rest of the trip. I rowed when the rapids weren’t to big, but quickly stopped rowing to grab onto something when i felt the slightest tilt in the raft. I did not want to fall back into the water. The rest of the weekend, I had a headache, and bits of nausea and dizzy spells into the beginning of the work week. But that didn’t stop me too much from enjoying the rest of the weekend with my friends =]
When we got home from the weekend, i wanted to learn more about my experience and discovered “Active Drowning” and the “instinctive drowning response” and was chilled to read, and relive, my experience on Troublemaker.
Active Drowning: people such as non-swimmers, the exhausted, and/or hypothermic at the surface, who are unable to hold their mouth above water and are suffocating due to lack of air. They perform the instinctive drowning response: well known behaviors in the last 20-60 seconds before being asphyxiated, representing the body’s last efforts to obtain air.
Instinctive Drowning Response: contrary to popular belief, individuals who are drowning do not exhibit frantic behaviors such as flailing arms or yelling for help (these behaviors are more contingent with a swimmer in distress, but not one who is drowning). The following behaviors are associated with drowning or near-drowning:
So i guess the big question is: would i ever go rafting again? Honestly, it’s hard to say. Although the whole nearly drowning part was pretty traumatizing, everything else about the trip was just so amazing. Rafting itself was exciting and fulfilling with its successful use of teamwork, militant commands, and sense of camaraderie when undertaking the natural elements of a river. Experiencing an adventure with friends is always an event! Even after rafting, being able to relate our experiences together brings people together [I still find it a bit funny, that all 11 of us friends that set out on this trip managed to fall out of our rafts XD..that’s gotta be some kind of statistical record =p]. So in short, i may do this again…it’s a little to soon to tell, but i can’t say i’m definitely ruling it out of my life’s adventures =]

My Food Adventures
again…i’m behind on my food postings. to the point where my memory of the recipes is kinda vague. Overall, all the food has been nummy =p our cookbooks haven’t let us down yet ^-^
Sauteed Chicken with Mustard and Dill Sauce - this was yummy. Changed the recipe up a lil cuz i was craving ‘crispy’ =p sooo took advantage of the extra panko we had in our pantry =p
Glazed Pork Chops with Sweet Potato Hash - this was yummy too =p The bone-in pork chops glazed with maple-dijon-cider-vinegar really complimented the sweet potato bacon hash. I’d eat the hash by itself too tho =x haha
Easy Pork Tacos with Mango Salsa - this recipe was actually chosen due to the fact that shyd and I had just come from a lil get together at a coworker’s house where they served mango salsa. These tacos were nummy =] Plus it was one of the few recipes that shyd was actually home to help out in the kitchen, so it practically took like 20 minutes to make =p
Glazed Chicken & Peaches - again, nummy =p sometimes a lil wary of the whole fruit n meat combination (except for duck l’orange =9), but this combination was good! Only thing was that we modified the recipe to go without peach preserves (cuz after looking at what was in the preserves, we found the recipe less appetizing). so to substitute, we just crushed up a couple extra peach slices, and added a lil peach juice n sugar.
Chicken Ragu - hadn’t had pasta in a while so we made an easy chicken ragu. This was yummy too, but yea, pretty a typical pasta with some sorta red sauce. Although, i really like when a red sauce is a bit chunky. Like this one called for stewed tomatoes n you crush it up yourself. I like being able to eat a pasta where you can get a forkful of pasta, meat, and tomatoes. N that first bite kinda makes that tomato burst and meld into that juicy piece of chicken n pasta *drool* XD Also, i found that i like sauces that incorporate carrots. Just adds a lil hint of sweetness without literally putting sugar in the sauce (i’ve seen some aunties to this =p).
Kare-Kare - yep, craving some good Filipino cooking again =p This was my first time making Kare-Kare without the supervision of my mom XD …it was also the first time i had seen it done without a pressure cooker (what my mom usually uses). so in terms of boiling time to let the meat just tenderize, i was kinda just going in blindly =T I also thought that if i were to let it slow cook on high while shyd and i were at the gym, it would help with the whole tenderizing process. Meh, missed that mark (lesson learned). We came back from the gym n the meat wasn’t as tender as we had hoped. We ate some of the smaller pieces that were okee, but mostly stuck to eating the gulay with rice while we let the slow cooker do its job for another 3 hours =x Luckily, that did the trick, n you know filipino food only tastes more awesome as a leftover XD
Caramelized Pear & Gorgonzola Pizza - OM NOM NOM!!! Basically, ever since we had CPK with our wedding photographers after our engagement shoot, this pizza has been a favorite of mine n shyd. And after that lil get together at a coworker’s house, where homemade pizzas were also served, we wanted to try making pizza ourselves so we could skip the whole CPK expense. SUCCESS! Shyd came home from work to the smell of freshly baked pizzas, and sat down to a valid replication of CPK’s caramelized pear & gorgonzola pizza [and sausage-mushroom pizza =p].
The first picture is of the pizza itself which has caramelized sweet onions, homemade gorgonzola dressing, caramelized pears, candied walnuts, gruyere cheese, and a sprinkle of gorgonzola crumbles. The second picture is of the spring mix salad that goes on top (didn’t want the salad to wilt). The salad also has the gorgonzola dressing and candied walnuts in it.
Sausage-Mushroom Pizza - i had enough dough to make two pizzas =p
someday, i’ll suprise shyd with a beagle…
n i’ll plop him down outside like this so he can wait for shyd to come home =p
